Cheesy Zataar Scrolls

This recipe is a twist on the traditional man’ooshe, transforming it into scrolls with delicious cheeses. Best eaten warm, straight out of the oven for breakfast, but enjoyable any time of the day!


Ingredients

2 1/2 cups plain flour

7g sachet dried yeast

2 teaspoons salt

1 teaspoon caster sugar

3 tablespoons olive oil

3 tablespoons za’atar

100g mozzarella (shredded)

100g parmesan (grated)

100g feta (crumbled)

Method

Prepare the Yeast Mixture:

In a large bowl, combine the dried yeast, salt, and sugar with 1 cup of warm water.

Set aside for 5 minutes until the mixture activates and becomes frothy.

Make the Dough:

In a separate bowl, sift the flour and make a well in the center.

Add the yeast mixture to the flour and mix until just combined.

Turn the dough onto a lightly floured surface and knead until smooth (about 10 minutes).

Let the Dough Rise:

Lightly grease a bowl, place the dough in it, and cover.

Set aside in a warm, draught-free place for about 1 hour, or until the dough doubles in size.

Prepare the Za’atar Paste:

While the dough is rising, combine the za’atar and olive oil to create a paste.

Prepare the Scrolls:

Grease a 30cm x 24cm (approximately) oven-proof pan.

Punch down the dough and knead until it returns to its original size.

On a floured surface, roll out the dough into a large rectangle (approximately 47cm x 30cm).

Spread the za’atar paste evenly over the dough.

Sprinkle the shredded mozzarella, grated parmesan, and crumbled feta evenly over the paste.

Form the Scrolls:

Starting from the long end, roll the dough to enclose the filling.

Cut the roll into portions about 2cm thick.

Place each portion (face up, side by side) in the prepared pan.

Cover and set aside in a warm, draught-free place for 30 minutes to rise.

Bake:

Preheat the oven to 200ºC.

Place the pan in the oven and immediately reduce the temperature to 180ºC.

Bake for 30 minutes or until the scrolls are golden.
