Kibbeh Nayyeh

Kibbeh Nayyeh is a traditional dish that can be enjoyed as a side dish, main meal, snack, or a quick go-to when there's nothing else to eat. While it may seem an acquired taste due to its raw nature, once you try it, you'll love it!

Ingredients

6 tablespoons burghul (washed and soaked)

500g fine kibbeh meat

1 1/2 teaspoons salt

1 tablespoon kamoune spices

1 small birdseye chilli

1 small white onion

1 red capsicum

2 sprigs mint leaves

2 sprigs basil leaves

1 tablespoon walnuts

Method

Prepare the Vegetables and Herbs:

In a food processor, add the onion, capsicum, chilli, mint leaves, and basil leaves.

Process until the ingredients are finely chopped but not a paste.

Combine the Ingredients:

In a large bowl, add the chopped mixture to the fine kibbeh meat along with the soaked burghul, salt, and kamoune spices.

Use your hands to combine and knead the mixture like dough until all ingredients are well combined.

Shape and Serve:

Shape the mixture as desired and serve immediately with a drizzle of olive oil.

Best enjoyed with Lebanese bread.
