What you'll need:

4 - 5 cups continental parsley leaves, chopped finely

3 green onions, finely sliced

1/4 cup fine burghul

4 medium tomatoes, diced

2 tbsp mint leaves, chopped finely

Dressing

Juice of 2 lemons

4 tbsp olive oil

1 1/2 tsp salt

1/2 tsp black pepper

1 tsp sumac (optional)

Method

  1. Rinse and drain your burghul. 
  2. Place the burghul in a medium size bowl. On top of the burghul add your diced tomatoes making sure they are covering the burghul and let sit for about 10 -15 minutes. 
  3. To make your dressing, combine all the ingredients and stir well. 
  4. In a large bowl place chopped parsley, green onions and mint. 
  5. Add dressing to the bowl of herbs. Add the tomatoes and burghul. 
  6. Toss gently and serve salad immediately.
